At Follis, we work with hook-caught fish, landed using longlines rather than nets. It is a demanding choice that we share with pride, as it is the true reason why our dentex or blackspot sea bream offer such unique texture and flavor.

The difference between good fish and an exceptional raw ingredient begins with the catch method. While net fishing focuses on high volume, longline fishing prioritizes individual quality. The fish undergoes no stress or trauma, preserving firm, compact flesh and an authentic taste.

THE LONGLINE METHOD

One fish at a time

The longline (palangaro) is a fishing system using a main line with attached baited hooks, engineered to catch one fish at a time. It is the technique that ensures optimal quality: the fish arrives in our kitchen flawless, undamaged by the pressure and crushing of heavy nets. It is also a highly selective, eco-conscious method targeting prized species such as dentex, amberjack, and blackspot sea bream, respecting the seabed without dragging across it. The longline fishing vessels we collaborate with operate across Sardinia, Apulia, and Sicily, providing us daily with meticulously chosen specimens.

Selecting exceptional fish requires following its routes. Our catch may originate from Sardinia, Apulia, Sicily, Liguria, or the Upper Adriatic. We select it daily, prioritizing absolute quality over geographical proximity.

Our catch of the day features wild fish from our local waters, served based on daily availability. For other menu items, we hand-select the finest hook-caught fish from top Italian auctions, which may come from Sardinia, Apulia, or Sicily. We always clearly indicate whenever a product is local.
